Personally, I believe Metroid would make for some of the coolest LEGO sets. With Metroid Prime 4 on the horizon, it's the perfect time to introduce stunning builds that I'd be eager to purchase. Additionally, I'd love to see actual LEGO Pokémon sets, though this seems unlikely due to the existing licensing agreement between Mattel and The Pokémon Company.
